Holiday Pudding

This recipe was brought into Masterchef Canada judge Claudio Aprile's family from his brother-in-law, Gordan Christie, and is now a staple at family gatherings during the holidays.

Serves 6


  • 2 cups flour
  • 1 cup brown sugar
  • ½ cup butter
  • 1 cup grated carrot
  • 1 cup grated apple
  • 2 cups raisins
  • 1 egg
  • a pinch of salt
  • ½ cup molasses (optional)
  • 1 tsp baking soda
  • ½ tsp cloves
  • ½ tsp nutmeg
  • 1½ tsp cinnamon

  • Brown Sugar Sauce:
  • 1 ½ cups of brown sugar
  • 2 tbsp of cornstarch
  • 1/8 tsp of salt
  • 3 cups of boiling water
  • 3 tbsp of butter
  • 1½ tsp of vanilla


  1. Mix all ingredients together as a cake. Put in a greased bowl, and cover top with cheesecloth tied down. Put in large pot with water. Cover and steam for about 3 hours. Watch that it doesn't boil dry.
  2. Mix sugar, cornstarch, and salt. Add boiling water, stir and cook until there is no taste of raw starch. (Or use a double boiler and let it cook away for about half an hour). Remove from heat and add butter and vanilla. If possible make it a day ahead and reheat - it has more flavour.
