
Gwyneth Paltrow's Avocado Toast, Three Ways
Asian Avocado Toast
Makes 1
- • 1 slice of your favourite bread
- • 1 tbsp Vegenaise spread (or mayonnaise)
- • ¼ tsp sriracha
- • ¼ tsp toasted sesame oil
- • ¼ to ½ avocado, depending on size, sliced
- • coarse salt and freshly ground black pepper
- • 1 7-minute egg (see recipe below), sliced
- • Furikake seasoning (see recipe below)
Pop your bread in the toaster and combine the Vegenaise, sriracha and sesame oil in a small bowl. When the toast is ready, spread it with the sauce, arrange the avocado slices over the top and season with salt and pepper. Top with the egg and sprinkle with furikake.
Boiled Eggs
Bring a small saucepan of water to a boil. Add the egg, making sure it is completely submerged, and keep the water at a steady boil over mediumhigh heat for the required number of minutes (7 for this recipe; we highly recommend setting a timer). When the timer goes off, remove the egg and run it under cold water or plunge it briefly into an ice bath to stop the cooking. Use immediately or let cool and store in the fridge for up to 1 week. To reheat a soft-boiled egg, place it in a saucepan of simmering water for 1 minute.
Furikake
Makes about ¾ cup
- • 2 toasted nori sheets
- • 2 tbsp toasted sesame seeds
- • 2 tsp coconut sugar
- • ½ tsp toasted sesame oil
- • pinch of salt
Use your fingers to crumble the nori into very small pieces into a bowl, then add the remaining ingredients. Store in an airtight container at room temperature for up to 3 days.
Spring Veggie Avocado Toast
Makes 1
- • 1 slice of your favourite bread
- • ¼ to ½ avocado, depending on size, sliced
- • 1 to 2 radishes, very thinly sliced
- • Meyer lemon or regular lemon zest
- • olive oil
- • coarse sea salt
- • pea shoots, if available
Toast the bread. Top with the avocado, sliced radishes, lemon zest, a drizzle of olive oil, salt and fresh pea shoots.
Bacon Avocado Toast
Makes 1
- • 1 slice of your favourite bread
- • 2 tbsp almond butter
- • ¼ to ½ avocado, depending on size, sliced
- • 1 slice bacon, pan-fried or cooked in the oven until crispy
Toast the bread, spread it with the almond butter, arrange the avocado slices over the top and finish with the crispy bacon.
